Episode 4 is on its way.
The video lands here when it's live on YouTube. The recipe is ready now.

Method

  1. Squeeze the lime

Roll it hard on the counter first so it gives up more juice. Squeeze it all into a small bowl and pick out the seeds.

  2. Mix the sauce

Stir the sriracha into the lime juice until it's one smooth, bright-red liquid.

  3. Dress the rice

Pour it over the hot rice and fold through with a fork until every grain is pink. Taste. More lime if it's too hot, more sriracha if it's too sour.

  4. Eat it

Straight from the bowl. Good on its own, better next to anything grilled.

Things we learned

  • Fresh lime only. Bottled lime juice tastes flat and makes the whole bowl taste flat.
  • This is the recipe for the leftover rice from Fried Rice night.
  • Vin's ratio is one squeeze of sriracha per half a lime. Jin doubles it.
